I love the rain, and for some reason it makes me want to bake. I've done this for as long as I can remember. There's something about this type of weather that causes me to love the smell of something sweet baking in the oven. Today I've decided to bake a Coconut Pecan Pound Cake - Karen McCarthy's recipe. It is deliciouso!
I'm watching Norah today, so this will be our first official baking day together. Let's just hope she enjoys it as much as I do. You're never too young to start baking, right?
Here's the recipe:
3 c. sugar 1 tsp. baking powder
2 sticks butter 1 tsp. salt
1/4 c. Crisco 1 c. milk
5 eggs 7 oz. flaked coconut
1 tsp. coconut extract 1 c. chopped pecans
3 c. flour

- Sift together flour, baking powder and salt. Set aside.
- Cream together sugar, butter and Crisco. Add eggs, one at a time; beat well. Add coconut extract.
- Add flour mixture alternately with milk, starting and ending with milk.
- Add coconut and pecans.
- Bake in greased and floured 10" tube pan for 1.5 hours in 325 oven. Glaze cake while still hot.
1 c. 10X powdered sugar 1 tsp. coconut extract
Add enough milk as needed to make glaze. This cake freezes well.
